Green Bean

FAVORITE Green Beans

These green beans are a recipe from my best friend, Susie.  This is a family favorite, and
we rarely eat fresh green beans any other way!  I've used these in the crock pot and taken
them to potlucks--I always end up with many requests for this recipe.

4-5 Strips Bacon (optional)
3 C Fresh green (and/or yellow) beans
1/2 onion, minced
1 t garlic, minced
2 T soy sauce
2 T brown sugar
black pepper

Add all ingredients to pot or crockpot.  Add enough water just to come to top of beans.  
Cover and simmer for 1-2 hours until bacon is cooked through.  I make these vegetarian
occasionally--still great! (I have also made this one adding 1-2 C. tiny red potatoes--makes
it a bit of a hefty side dish, but is really good!)

Roasted Green Beans

This recipe is from Susan Posch who helps Marilyn with the a la carte orders.

1# fresh green beans
1 onion, thickly sliced and separated into rings
6-8 cloves of garlic, sliced
olive oil
salt, pepper, balsamic vinegar

Combine the vegetables; dampen your hands with some oil and toss the veggies so they get
lightly coated. Spread onto cookie sheets, salt lightly, and bake at 375 for 20-30 minutes,
stirring every 10. The onions and garlic will caramelize and get sweet, and the beans will
start to darken and get crisp.

To serve, grind fresh pepper over them and drizzle with balsamic vinegar. Good hot, room
temperature, or chilled. Also good with other veggies: winter squash, sweet potatoes,
regular potatoes, bell pepper chunks, mushrooms, broccoli, carrots, etc.
